Am I missing a spring on the top of my carb. The butterfly seems to stay open. Looks like a hole on the linkage on the top right

Nope.... That all looks correct on this side of the carb
The chock coil on the other side may be missing or not connected????

On the other side of the carb ( butterfly) there's a screw holding a piece that connects to the choke rod where the choke base connects to the intake manifold. That closes and opens the butterfly according to engine temperature.

That is correct... That coil should close the choke flap plate as soon as you open the throttle when the engine is cold..

Here is the other side of the carb. Does this look correct? Also this Holley carb does not have mixture screws at the front? Is this common? The issue I’m having is that it idles fine but when you hit the gas it bogs down, sometimes even does before it produces power. Can’t seem to figure it out.

Accelerator pump
 
Those carbs are known for bad accelerator pumps. While shut off, look down the carb and push the throttle open. You should see a steady stream of gas shoot out of two nozzles. If not a good stream, it’s pump time. They’re cheap to replace.

Yes that all looks correct.
I also agree on the Accelerator Pump may not be working... AS per your description

Here is the base plate of the Holley carb. The 2nd picture shows the model number of the carb. When I pulled it off to rebuild I noticed there was no mixture screws. I figured if there should be some on the front where the 2 red lines are drawn. However the holes don’t feel/look threaded where a screw could be threaded in? Anybody know what’s going on here?

Oh the mixture screws are in there..... They are just blocked by the limiter caps.... You have to remove the caps to get to the screws....
