1. The dealer told me I have a 727 manual valve body transmission. The factory speedometer does not work. What do I need to make the speedometer work with the 727 transmission?
2. I was also told the oil pan holds 7 qts. But the dipstick looks like it may be the original. When going from a 5 qt to a 7 qt, is the pan wider, not deeper, thus using a 5qt Dipstick would work ok?

You'll need a speedo cable and the correct gear set to match your rear end/diff ratio. The speedo gears are listed by the number of teeth, which corresponds to the diff gears. The speedo gears are available on line. Or you can convert to a GPS speedo.
No idea on the dip stick thing. Drain the trany, add the correct amount of oil and check the level on the dip stick.
BTW - the guy did tell you how to use a manual valve body, right? NEVER downshift at speed, in fact I come to a full or nearly full stop before downshifting on mine.
