Smoke
The smoke does not happen for 5 min. after warm up. You may have a bolt which mounts the header at one of the water jackets in the head. You say you had them out to replace gasket so this could be the problem if it did'nt do it before.
Get some pipe dope rated for high temp (steam) and remove the bolts, apply the pipe dope and reinstall them at proper torque. Drain your radiator before removing the bolts.
I have a set of headers if you need them.

header leak
on my charger i had the same problem the heads have some
header bolts holes that go right throue .
solution buy longer header bolts and put thread lock on them.

She seems to be fine now, a little jealous ;D, I brought a friend over to see, I started her up just fine, she got in the car, opened the hood, was looking around and touching it, I turn off the engine and she didn't want to start up again in her presence lol, tried 5 or 6 times, No go. Never did that before either, then maybe 5 minutes right after she left, started up like normal.

Sounds like shes a jealous bird . . .My Z was like that. Fuel pump would surge causing the car to run like crap and smoke a little when i had a woman in the car. Ran fine with male passengers. Go figure.
Glad to se the problem is not an issue right now, but if ive learned anything, when a problem "fixes" itself its just waiting for an opportunity to get worse. .
