69 fury gauge jumping to hot?

My 1969 fury temperature is jumping to hot when you start it but then goes back to normal temp in a few seconds. It has done this a few times. Driving it will rise a little higher than normal but the thermostat kicks in and it goes down. Collant is full. Is this a sign I need a new thermostat? Is there a temperature sending unit somewhere that sends it to the gauge that could be the problem?

Sounds more like the temp sending unit, on the top front of the motor

Does the fuel gauge work? Does it do the same thing? If the fuel gauge does not work, it might be the gauge instrument regulator going bad.

Does it "act" like it is trying to overheat, IE puke antifreeze, etc?

If not I'd replace the gauge sending unit first.
