How do I tell what Carburetors Are?
I noticed that a company local to me has rebuild kits listed for C body's with 2 barrel carbs, however they have 2 listings, one for a Holley 2 barrel, and one for a Carter 2 barrel, how can I identify these 2 Carburetors and tell them apart.

Most Holley Carbs will say Holley on them somewhere.
Quickest answer, post a picture, some one here will be able to ID it. If you can take a picture, just fo some internet searches, for one that looks like it and post the link.

You cannot go by that, really. As old as these cars are, you need to find either the tag if present, or STAMPED (not raised cast) number and look the thing up by carb number.
And, are we talking small block or big block? Strombergs also showed up on these cars and with a little grease and grime, can look amazingly just like a Carter. I don't think you'll have a Holley on your small block, but you could have any one of the three on a big block
The first posted photo is a Stromberg that might be found on a small block. The left thumbnail is a small bore BBD Carter that would be more common on a small block. But note how similar they are in appearance.
The last two thumbnails are the large bore (big block) BBD Carter, and a 2210 Holley. Note how similar THEY are. Stromberg ALSO built a carb for these applications, but I was unable to find a good photo of it. It ALSO looks very similar at first glance.
