Probably my favorite recipe to make is something I made up. One person I shared it with called it a "festival of cheese". It is just something I whipped up after a long day at work and no desire to go grocery shopping. It's now a household favorite. It's super easy:

Preheat oven to 400

take one package of cheese tortelloni (refrigerated or frozen) if frozen boil it according to directions, if refrigerated ..hey no worries.

Get a large casserole dish ( I like Pyrex ) spray with a little Pam

Take one jar of your favorite alfredo sauce and dump half of it in ( you can add more if you have some in inventory)

Get whatever cheese you have in the fridge ( we like a little shredded cheddar, and a little shredded mozz) Put oh about a cup of cheese on top of the alfredo

put the tortelloni on top of that

dump the rest of the alfredo on top of that (you can also add some mushrooms or even diced peppers too)

add some more cheese to the top (you can cover with foil if you want to)

Bake it until it's hot enough for your taste ( I wait until the top cheese is kinda brown which takes about 10-15 minutes in my oven)

Eat it

That simple and delicious. I usually serve it with salad and some form of bread. If you are really desperate you can use leftover hamburger/hot dog buns or the heels of bread, spread some butter on them sprinkle with garlic seasoning or garlic salt and bake at 350 til desired texture.

favorite dish of all times would have to be puerto rican rice and beans with a nice juicy steak on the site. funny i could make one phonecall and have this served in hours.
