Instrument cluster and infotainment screen brightness on FCA vehicles

Howdy y'all,
I was wondering if anyone on here knew how to turn down the screens brightness with the headlight switch in the OFF position. I know that it can be done (ref. the video). In every FCA vehicle I have been in, when the screen brightness adjustment wheel is turned down, and then the headlight switch is turned to off, both the instrument cluster and screen, as well as the center stack infotainment screen (with some minor differences for that one), the screens automatically jump to their brightest setting. This is also possible on the newer chargers I have used, but the example is from an '11-'14.
If anyone could help me out that'd be great.
