Besides 60 over and a mild cam, what else have you done and added to the motor? Do you want more power to light up the tires? To go faster? Depending on why you want more power, you don't always have to do things with the motor.

All the power is in the heads. Find a good machine/performance shop and spend all the money on the heads. Bigger seats/valves, bowl work, port matching, blending/radiusing...that is where the power is.

2 x on the heads, doesn't matter what engine it is, for more bang for your buck the motor has to breathe better.

enlarging the valves on your current heads would be the easiest way to go
headers with larger exhaust would also do the trick

a posi unit in the rear axle will help you to accelerate faster. 66 pretty much hit it on the head with the intake manifold, dual exhaust (with x-over pipe), headers, lower ratio in the rear axle (that could hurt your top end speed though). A shift kit will help to ferm up your shifts and make them a little quicker. A well built tranny will help to get more power to the wheels.

Since you only have about $200 left over, I'd look into an intake manifold or put it towards a good set of headers.

put a 1" carb riser under the carb and you will get a few more ponnies and try a good breather (air cleaner) , run a little higher octane fuel as sometimes it does help but not all the time , light weight starter, port and polish the heads you have, trans shift kit, get a electric fuel pump, put the gap to .040 on the plugs use solid core wires aluminum water pump and housing, a bracket torque converter, there are a lot of little things you can do to improve your engine but it all depends on how far you want to go

How long have you been beating on the posi unit? You might want to pick up the back end and make sure that it is still tight. A K&N Stub Stak will help that 780 holley get some air into the motor.

Tim, do you have any experience with the K&N stub stack, I was thinking about getting one for my Edelbrock 750cfm on the 440?

I do actually. I run one on my j10 in an Edlebrock 600 carb. It does help get some extra air in there for a little more power over the whole RPM band. Just make sure that you use the right size air filter with it to really make it work for you. I have a height restriction on my motor so I got an air filter lid to compensate for the lose of height. I love it.

I am not sure what kind of room I am going to have as of right now, but I do have the signature series air cleaner, and wasn't sure how well they would work together.

They work with the height of the air cleaner. I think for a larger carb you want a 4" or taller air filter.

Cheap hp is a borrowed die grinder some burrs that you can pick up at Napa and if you're not experienced do the exhaust side of your heads and match the ports to the exhaust gasket, check swap meets/ scrap yards for headers, it's time to get resourceful. You'd be surprised how many ponies you can find for basically free. Let us know what you're doing and we will try to help.
