89 D100 318 efi to carb

Hey guys i relecently purchased a 1989 D100 with a 318. Come to find out the truck originally had a 6cyl in it and its has a rebuilt title. I installed new headers, dual exhaust, valve covers, painted the block, deleted the a/c, and put on a 14" breather. This is a project my father and I are working on together. The truck ran great until we did all this. We also capped off all the vac lines to clean the engine bay up and make it simple stupid. We have no experience with MOPAR at all. We've always worked GM and Ford on any projects. Now the truck looks and sounds great but now that the 02 Sensor and vac lines have been removed the truck idles good for a minute or two then start dying and revving back up. Then it dies. Now if I let off the gas and come to a stop the truck dies. Anyone know what I can do to remedy this issue? We have been talking about converting to carb but from what I have been reading there's going to be a lot more than just Manifold and carb swap. I'd really appreciate any help because this is my daily driver now. Thanks in advance for any help.

i apologize for such a late response but my comp took a crap. I actually solved this issue by plugging the O2-Sensor back in.
