new member from mass. 67 gtx

hey guys,
newbe here.just purchased my bucket list car.67 gtx.it has a 512 stroker motor and didnt realize
i would only be getting about 6mpg.it has and 850 edlebrock carb.do you think it would help
if i put a 600 on it?can i use the same manifold?also first night out with her she would not start,not even a click
after i shut it down .towed her home.tried it the next morning and it started right up and has been starting since.
the lights were bright when it wouldnt start.any help would be much appreciated

Very nice looking ride right there!

I hate to be that guy, but that kind of gas mileage from a stroker sounds about right. I'm running a modern hemi displacing 345ci and I get about 17mpg highway, 13 city.
To be honest, I go ahead and write off economy in any vehicle I own because it is often the opposite of features I prefer; loud noises and highway passing power. Things you probably have plenty of these days.

I can't really answer the questions myself, but it might be helpful to ask the previous owner / seller if they have any helpful tips about the starting problem.

Man that looks nice!
Gas mileage- 500 BB is one big air pump, you can try a smaller carb, probably not. I've had mild 440s that only got seven miles per gallon. I've also got a 500 that struggles to get three with a tail wind going down hill.

Put fuel injection on it, it will get you the best mileage and performance possible.

To piggyback off what Iowan said,
There are a lot of hotrod articles and shows where they had a lot of success with upgrading from old school carb to EFI.
If you have the money...

Nice Ride...
Id Dump the Edelbrock for a Holley 850 or go with the EFI.... But if you move down to the 600 CFM, I dont think the engine is going to like you much, engine will be too lean. Just my 2 cents...

I'm with RacerHog on the CFM downgrade. Seems like restricting air flow might make poor power and possibly still get poor mileage, maybe even make the engine difficult on start and idle (unless you like the idea of tickling the throttle to keep it running, to each his own).

If I had the car and the money, I'd upgrade to an EFI that learns automatically like the guys on RoadKill usually do.
Of course, they get a lot of their parts for free... So

I wouldn't rule anything out, especially if you're seeing inconsistent behavior.
But yeah, if it were me, I would put economy after reliable performance and power with that particular rig.
