67 Charger - 440 & a 6-spd?

Hello. I'm working on a 67 Charger as my first project. I still know very little about fixing cars but am trying to get a solid plan to work off of going forward and am trying to learn everything I can. It currently has a 383 stepped up to 400 and a 3spd auto transmission (727). I'd like to get a bigger engine eventually, 440 would be fun is what I've been told so far. My main question is- is it possible to put a 6spd manual transmission on an engine like that? As far as the drive-train part of the car, I don't care about keeping it original. I want to put the best parts I can in it, operating under the assumption that the parts and tech available now are much better than what was available in 1967. And if turning an automatic car into a standard is to complicated or not possible...what about pairing the engine with a new automatic transmission? For example, Dodge has that new 8spd auto transmission...

Thanks for any insight you can provide! Even a simple yes you can or no you can't will be helpful haha.
