Intake Manifold
you could always spend the time and money and send the heads, block and intake out and have them all matched. They will plane what they need to and all the surfaces will fit (hopefully) perfect.
Otherwise just go with a really goo gasket set like you have.

Just did this myself. There are two schools of thought here. One is to use permatex gasket adhesive on the head itself and glue a gasket there, leaving all the other surfaces dry for easy removal in the future [they still dont come off easy after a little heat]. Or the recommended way is to use the adhesive to glue the gaskets to both sides of the valley pan after you painted it [you did paint it? Right? No big deal, it just turns into a rusty looking P.O.S.] and taped off the gasket surfaces. Then trim the gasket to fit the intake ports. Kinda messy, and the adhesive doesnt hold that well so the gaskets tend to squirm around. Follow the rest of the directions for the pan end seals. When bolting down, try to get every bolt in first a few threads by hand before snugging any of them. I think some thing in my motor might have been smoothed cause they didnt line up perfectly, ended up with a leak and stripping a hole. Torque to 25ftlbs I believe.
Well it worked! But it was not fun lining it up, be very careful! Yes I painted everything. I can see how messing up a bolt can happen real easy, two of them gave me a problem to start but worked out ok. According to my 1966 Monaco shop book the tourqe is 50 lbs.
